            &lt;div class="clearfix text-formatted field field--name-body field--type-text-with-summary field--label-hidden field__item"&gt;&lt;p&gt;The other night I was having some Cabernet Blanc with my homies and - Cabernet What, I hear you say? You heard correctly, the wine is called Cabernet Blanc, a grape variety that is grown by just a few vintners in central and western Europe. The specimen whose label you see below comes from the Pfalz, one of my favourite German wine regions.&lt;/p&gt;

&lt;p&gt;It was produced by the Mosbacher family who have been making wine in the village of Forst for a hundred years now. Currently, they grow vines on some 20 hectares of land, with roughly 90% of the production dedicated to white wine, mostly Riesling. Cabernet Blanc makes up only about 1% of their overall production.&lt;/p&gt;

            &lt;div class="clearfix text-formatted field field--name-body field--type-text-with-summary field--label-hidden field__item"&gt;&lt;p&gt;While sifting through the candidates for this year's Wine Rambler shortlist, we noticed hat we were less generous with top ratings in 2011 than previously, withholding our highest praise, "monumental", completely. Whether that means we are becoming more exacting in our critical standards or whether the truly stellar wines somehow passed us by and we had to make do with the enormously good we can't quite say. A bit of both, most probably.  &lt;/p&gt;

&lt;p&gt;As you may not want to take our word for it in every case (and indeed you shouldn't!), we have provided direct links to the wineries' websites for the adventurous among you to follow up, get into contact and inquire about distribution and availability. Almost all German wineries do their own shipping and are quite good at it. In case of deliveries to the UK, however, newly estranged from the European mainland, this will probably have to be arranged via the United Nations. Just joking. Needless to say, The Wine Rambler is entirely &lt;a href="https://www.winerambler.net/wine-rambler-ethics"&gt;his own man&lt;/a&gt;, as it were, and not commercially associated with any wineries or merchants, although wines like the following sometimes can make us wish we were.&lt;/p&gt;

            &lt;div class="clearfix text-formatted field field--name-body field--type-text-with-summary field--label-hidden field__item"&gt;&lt;p&gt;For me, the last couple of months were Silvaner and Pinot Blanc (Weißburgunder) time - two of my favourite wines during asparagus season. A Pinot Blanc I was particularly looking forward to comes from Mosbacher, a well respected Pfalz winery. The Mosbacher Weißburgunder SL is made "sur lie", which is French for "on the lees", meaning that the wine spent extra time on the deposits of dead yeast - a process that is meant to result in more depth and substance.&lt;/p&gt;

&lt;p&gt;I took the Weißburgunder with me to a four course asparagus menu, hoping it would be versatile enough to go with a range of dishes from asparagus soup to fish with asparagus spears and horseradish hollandaise.&lt;/p&gt;

            &lt;div class="clearfix text-formatted field field--name-body field--type-text-with-summary field--label-hidden field__item"&gt;&lt;p&gt;"This monstrosity tastes monstrously good." - This is what Imperial Chancellor Otto von Bismarck had to say about a wine from the Ungeheuer vineyard. "Ungeheuer" is the German word for "monstrosity", and it is also the name of a famous vineyard in the Pfalz region. It is about time for us to review an Ungeheuer wine, and today we are looking at the premier dry (GG) Riesling from Mosbacher - one of the top Pfalz wineries.&lt;/p&gt;

            &lt;div class="clearfix text-formatted field field--name-body field--type-text-with-summary field--label-hidden field__item"&gt;&lt;p&gt;When german Riesling is praised for its "finest perfume of fruit supported by a lightweight frame", it would seem that its ever-delicate balance must be so fragile that it would never survive contact with heavy, savoury food. Not so. To realise what Riesling can do with Sauerkraut, black pudding and liver sausage, you need to have tasted this classic german pairing* (do not, I repeat do not, take the Wine Rambler's word for anything).&lt;br /&gt;
For this, you need a Riesling that is dry rather than fruity, steely rather than floral, firm rather than ethereal. You need, in short, a dry Kabinett from the Pfalz. You also need good Sauerkraut and freshly made (raw, that is) sausages, of course. In what may simply be a local tradition or may have deeper and more sinister reasons of carnivore logistics, Munich butchers offer these every Friday.&lt;/p&gt;

            &lt;div class="clearfix text-formatted field field--name-body field--type-text-with-summary field--label-hidden field__item"&gt;&lt;p&gt;Yellow colour with a shiny golden sparkle - very promising. The nose even better: cool mineral, herbs, lemon and peach - very pleasant peach indeed, but not overwhelming, and some apple, which adds just the right amount of bitter. The peach continues right onto your tongue, giving the Riesling an elegant juiciness, while the apple and especially mineral dominate the first half of the long finish. A wine with good structure, elegance but also a certain assertiveness, Georg Mosbacher's dry late harvest Riesling convinces from start to finish - even two days after I opened the bottle it stays sharp and clear. What can I say, a really good wine!&lt;/p&gt;

At first, this smells and tastes overwhelmingly and quite explosively of green berries and fresh green leaves and grass, also grapefruit. After some time, it goes into a Riesling-direction, and unripe peaches and minerality come out more.&lt;br /&gt;
Dominated and defined by razor-sharp, but clean and well-integrated acidity, this is a zesty and appetizing wine that friends of straightforward dry Rieslings will enjoy very much. It tastes much lighter than the actual 12.5 % and makes me think of a picknick beside a mountain stream. &lt;/p&gt;
